Globe Artichokes prefer soil that is fertile, well drained with plenty of organic material in it. They like an acidic soil with a PH of around 5.5. They like full sun and do not tolerate frost well. They are a perennial in warmer climates (up to zone 5), but must be grown as an annual in colder climates. Start Artichokes 8 weeks before last spring frost. Space plants 2' (61cm) -3' (91cm) apart and water well and use mulch generously. Artichokes are also heavy feeders so make sure to fertilize with a high nitrogen all purpose fertilizer twice a year.

Jerusalem Artichoke, or Sunchokes are tubers that should be planted around 6" (15cm) deep and a foot apart in a moderate to fertile loose soil with a PH of around 6 - 7. Plant about 6 weeks before the last frost. They do need a good amount of water and get pretty tall (10' (3m) or more) so keep that in mind when planning where to grow them.
